Perfect for parties, dinner parties, social functions, potluck events, and the such! It only takes a few minutes to put together and right away develops a flavorful punch! The best part is that you can make this using store-bought frozen cooked shrimp, so no cooking necessary!

A contradiction and combination of flavors and sensations: refreshing yet spicy with sweet notes from the shrimp, cucumber, and bells peppers and tangy notes from the lime, lemon, cilantro, and onions.
What ingredients will I need to make this?
Frozen cooked shrimp, cilantro, limes, lemons, olive oil, a cucumber, a red onion, red and yellow bell peppers, salt, black pepper, tomatoes, cayenne pepper, jalapeño peppers, and avocado (optional).
What else will I need to make this?
A cutting board, knife, wooden spoon, large mixing bowl, and measuring cups and spoons.
Can I make substitutions?
Yes. You can use Thai chilies instead of jalapeños, Tajín instead of cayenne pepper, and red wine vinegar instead of lime juice.
Can I make any additions?
Yes. You can add green onions (spring onions) and avocado slices (optional).
How do I serve this salad?
It is served cold as an appetizer with tortilla chips, pita chips, saltine crackers, or lettuce.
Once prepared, how long can it be stored and how?
Refrigerate covered for up to 4 days.
INGREDIENTS
2 lbs (32 ounces) of frozen cooked small shrimp, peeled and deveined
1 large cucumber, peeled, seeded, and chopped into small
1 cup of fresh cilantro, chopped
2 jalapeño peppers, seeded and chopped
1 large red onion, chopped
1 large red pepper, seeded and chopped
1 large yellow pepper, seeded and chopped
1/4 cup of freshly squeeze lime juice
2 lemons
1 teaspoon of cayenne pepper
1/4 cup of olive oil
sea salt
black pepper
2 Roma or 6 Cherry tomatoes, chopped
1 large avocado, sliced (optional)
Method
Thaw the shrimp by placing in lukewarm water for 20 minutes prior to making the salad. Once thawed, place in a large bowl.
Add the cucumber, cilantro, onion, lime juice, jalapeño, red and yellow peppers, the juice of the lemons, olive oil, tomatoes, cayenne pepper, and salt & pepper to taste. Mix well.
Refrigerate covered for 2 to 4 hours for better flavor depth or serve right away.
Serve cold and top with avocado slices, lime and lemon slices, and fresh cilantro.
